Lemon Curd & Ricotta Pancakes – “Recipe of the Week” for the week ending 2nd May 2010

Ingredients: 1 cup of ricotta cheese, ¾ cup of flour, ½ teaspoon baking powder, 1 ½ teaspoons of sugar, pinch of salt, ¾ cup of milk, 3 eggs, with the yolks and whites separated, ½ teaspoon of vanilla essence, butter, powdered sugar, lemon curd.

What to do: Combine the flour, baking powder, sugar and salt in a bowl. In another bowl, mix together the cheese, milk, egg yolks and vanilla. Beat the egg whites until they form stiff peaks, and pour this over the ricotta mixture. Stir until they combine a bit, and fold in the egg whites. Lightly butter a frying pan, and pour in a 1/3 of a cup of the mixture. Cook until each pancake is golden brown on both sides. When the pancakes are cooked, quickly apply lemon curd to one side, and stick them together to make sandwiches. Then sprinkle with sugar.
